For our founder, Stefan Griesbach, seafood is more than just a business—it’s a lifelong passion. With over 35 years of experience in the industry, he brings that expertise to everything we do.
Though our website may be big, we’re still a small, brick-and-mortar fish retailer. Whether you shop with us at our store, market stalls, or online, we offer the same great selection, and personal touch.

Our ethos
How is it so challenging to find a good supply of fish on an island surrounded by some of the world’s best fishing grounds? Ireland’s relationship with seafood has been complicated, and continues to be.
But we’re dedicated to help changing this narrative, starting with baby steps. Our approach is FULL CATCH offering not just popular species but also educating and encouraging our customers to eat MORE fish and learn about all the amazing catches from our local fishermen.#plentymorefishinthesea
Our fish
Should we offer the same fish selection year-round? If so, you might be on the wrong website.
We embrace seasonality. The best fish quality is achieved when it’s both local and in-season. With nearly 90% of our fish sourced in Ireland, our selection process and prices vary with the season. “We eat what we sell and only sell what we would eat,” so when a species is temporarily unavailable, it is either it was lucky #swimming or for other good reasons. Enjoy the seasonal alternatives.
As for flying fish, we reject importing by air. The environmental impact of air miles and the effect on local food supplies are too significant.

Skipper
It takes 5 years to learn a trade, 10 to master it. Parisian born Stefan has served for 35 so far… Fish farming, marine biology, processing, retail trade,… And a life long appetite for seafood.
DIMITRI
Filleter & engineer
Filleting fish, Selling it, Driving, Fixing broken stuff… “Bob” as we sometimes call him. “Dima”, is our “Jack” of all trades.
MICHAEL
BOOK KEEPER
Mick is our office manager, taking care of all our administrative hurdles, so that we get don’t get distracted from all the “real” work
GANNET HQ: Our fish factory
All our filleting, preparations, and fish packing happen at Gannet HQ, which we call the FACTORY—though it’s far from an industrial one.
Designed and built by us, it meets all food safety standards and regulations, and we believe it’s the best fish facility in Ireland, created by and for those who handle fish daily. If you’re in Galway, feel free to drop by for a look behind the scene.
We are Fishmongers. 100 % of our Wild fish is sourced straight off the boats. When fish lands, all hands on deck join in to sort, fillet, and pack all orders on time for our courier to pick up.
We are usually too busy to answer the phone, and fault of outsourcing this service in India :) ... We made the choice to simply cut off our neglected phone lines.
