Eatmorefish.ie is the Online shop of Gannet Fishmongers, established in 2004 @ the Galway Market (where we are still pitching Galway busiest Seafood counter every Saturday).

” Traditional Irish Fish, influenced by French roots & hints of Asian flavors” 

Over the years, we earned the respect of our peers across the Irish Seafood industry and Ireland’s craft food community. Our lifelong love for seafood, passion for cooking and enthusiasm sharing with others, has been rewarded with a long list of food Awards… and trust of all the “Hungry Gannets”, fellow Seafood enthusiasts, who rely on us for their weekly supply.

With over 30 years experience and a wealth of fish knowledge, Stefan Griesbach, our owner/manager, is hands on, supervising every details of our operations, from Website management to products sourcing, filleting, all the way through to orders packing.


We are surrounded by the richest fishing grounds in Europe. Much of it may have been foolishly handed over to foreign fishing fleets. Let’s enjoy what remains: “Our fish! Our food!”

Promoting locally caught not only benefits us and our local fishing industry. Seeking solutions to reduce our footprint and improve our ways also benefit cute Polar bears. We are a business with a definite environmental commitment.

Honesty. We live and work in the “Hands-on Real World”, not in remote corporate consumerism La la land… The Quality of our fish is real, and so is our promise when we say we get you to enjoy the best Seafood.

Passionate about Fish! Mad about Seafood? Yes That’s would be us… We always love eating it and cooking with it.  And just like Gannets, we just happen to be so greedy at catching it, we always have more than enough to share with everyone else…


Donegal, Mayo, Galway, Kerry, Cork, Wexford, Gannet’s fish supply network stretches all along the Western sea front. The Wild Atlantic Way, where 95 % of our wild catch is landed.

Whether we travel to catch it ourselves or set one of our suppliers to pick it for us, we are real Gannets about it… “We want the Freshest, We want the Biggest, We want the Best, We want it All”… Wisdom has taught us that “without is sometimes better than with”, that there is no such thing as second best.

Imported Fish? It happens if the quality and choice is better to what we may source locally. But we have set ourselves 3 rules:

  1. Not to import fish simply because it is cheaper somewhere else.
  2. Only flying fish should take off in the air. None of our imports are air freighted.
  3. Only fish landed in Ireland may be labelled Irish, this does not include the freight terminals of Rosslare, Dublin, & Belfast…

We love seasonality because of its highs and lows. A product temporarily off the supply list, is a given opportunity to taste and enjoy something else. As we say: “Many more fish in the Sea”


The most important assets for any business are the people making it work. We are very fortunate @ Gannet to have got together a great crew of professional and very committed people. Meet the Cast:



It takes 5 years to learn a trade, 10 to master it. Parisian born Stefan served 30 so far… fish farming, marine biology, processing, retail trade,… And a life long appetite for seafood. Enough to get a few of his fish facts right.



Filleting fish, Selling it, Driving, Fixing broken stuff… “Bob” as we sometimes call him. “Dima”, is our “Jack” of all trades.



Mick is our office manager, taking care of all our administrative hurdles, so that we get don’t get distracted from all the “real” work

GANNET HQ: Our fish factory.

All our fish preparation and filleting takes place at our processing unit @ Gannet HQ. We call it “The Fish Factory” but we are glad it’s not one… It is no more than a small warehouse, on a busy side Street in an industrial estate on the East side of Galway City.

We designed it & built it ourselves, so not only does it comply with all food & safety standards, but it is also according to us, “the best built fish factory” in Ireland. Designed for and by people who are actually handing fresh fish…

If you ever pass us by, call up to say hello. We have an open door policy and always welcome in Visitors and Customers to look behind the scene.

We are Fishmongers. 100 % of our Wild fish is sourced straight off the boats. When fish lands, all hands on deck join in to sort, fillet, and pack all orders on time for our courier to pick up.
We are usually too busy to answer the phone, and fault of outsourcing this service in India :) ... We made the choice to simply cut off our neglected phone lines.
