We always buy the Premium and largest available fish, and always on the bone, to give us the greatest control over quality. As skilled fishmongers, we fillet each species ourselves to ensure optimal freshness and careful handling. We know when to buy and when not!
Our whole fish are sold scaled and gutted ( Pan ready), while our fillets are always deboned and trimmed to the highest standards. This policy creates more waste — and justify higher prices — but we guarantee you to receive only the best, and true value for your money.
Wild fish sizes vary, but we expertly portion them to match our product descriptions. If we can’t do it, you’ll get a proportional refund.
Note: our available preparation options for whole fish always reduce the final delivered weight.

How Is Your Order Packed? Your order will be carefully packed in an insulated box with coolants to ensure the product stays fresh, regardless of the weather. Our boxes, including the tape, are fully recyclable.
As for the ice packs, they contain a gel that’s 99.9% water and 0.1% organic gel. This food-grade compound commonly used in agriculture to improve soil moisture. To recycle, you can add the gel to your compost or mix it with soil for plants. The plastic envelope should be disposed of in your grey bin.
