STIR FRIED RAY WINGS WITH GINGER & SCALLIONS

STIR FRIED RAY WINGS WITH GINGER & SCALLIONS

Ray wings, a traditional popular Dublin Fayre are also very popular in part of Asia. Check this classic stir fry recipe with fragrant ginger & garlic for a cheap, fast & delicious dinner.

Ingredients

  1. Ray wings (350g per serving)
  2. 2 tablespoons soy sauce
  3. 1 tablespoon oyster or fish sauce
  4. 1 tablespoon shaoxing wine or dry Sherry
  5. 1 tablespoon sesame oil
  6. 2 tablespoons vegetal oil
  7. 2 garlic cloves minced
  8. 1 tablespoon grated ginger
  9. 3-4 chopped scallions
  10. 1/2 red Chili sliced (optional)
  11. 2 tablespoons Sesame seeds
  12. Salt & pepper to taste
  13. Cooked rice for serving

Method

  1. 1 Chop the ray wings in long strips.
  2. 2 In a bowl, marinate the ray wing strips with soy sauce, oyster sauce, Shaoxing wine, and sesame oil. Let it sit for about 15-20 minutes
  3. 3 Drain & discard the marinate.
  4. 4 Heat vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  5. 5 Add the marinated ray wing strips to the wok. Stir-fry for about 2-3 minutes until they start to turn opaque.
  6. 6 Add sliced scallions and chili pepper (if using) to the wok. Continue to stir-fry for another 2-3 minutes until the ray wing is cooked through and the scallions are wilted
  7. 7 Sprinkle with sesame seeds. Season with salt and pepper to taste.
  8. 8 Serve hot over cooked rice. Enjoy your Stir-Fried Ray Wing with Ginger and Scallions!
