In a bowl, combine diced kingfish with grapefruit and lime juice. Allow the fish to marinate in the citrus juices for about 15-20 minutes, or until the fish turns opaque.

Drain excess citrus juice from the fish and transfer the fish to a serving bowl.

Add finelly sliced red onion, little cubes of cucumber, seeded tomatoes, jalapeño, and cilantro to the fish. Season with salt and pepper to taste. Gently toss to combine.

Chill the ceviche in the refrigerator for at least 30 minutes to let the flavors meld.
