Hiramasa or Amberjack (commercially branded as Dutch Yellow tail) is an oily fish species originating from the Pacific Ocean. It is so prized by Sushi lovers for its high oil content and rich Umami, that high end European Sushi restaurants used to  have it flown all the way from Japan. It is now available farmed sustainably in the Netherlands in land based RAS (recirculated Aquaculture systems) with no impact on its surroundings. DIRECTLY SUITABLE FOR SASHIMI ( does not require freezing )
