Bocartes del Cantábrico en Escabeche – Cantabrian Anchovies in Escabeche
Caught along the northern Spanish coast and carefully prepared in the traditional escabeche marinade of vinegar, olive oil, garlic and spices, the fish are gently cooked and preserved to develop a bright, balanced flavour. The escabeche gives these Spanish Cantabrian anchovies a delicate acidity that complements their natural Oiliness and tender texture.
Unlike salted anchovies, bocartes en escabeche are lighter and more aromatic, making them perfect for tapas, salads or simply served with good bread.
A classic speciality from northern Spain and a delicious way to enjoy Cantabrian anchovies beyond the traditional salt-cured fillets.
Serving suggestion:
Serve at room temperature with crusty bread, olives and a glass of chilled white wine.
