Salt Ling fillet (skin on)
Before refrigeration was available, salting fresh fish was the common way to preserve & transport it. Salted Ling has long been staple food for Irish rural communities. The tradition is still ongoing in area like Kerry where it is widely consumed as a tradition on Christmas Eve.
Salted Ling is also a perfect to use as cheaper alternative to Bacalhau (Salt cod).
This product must be pre soaked in fresh water for 24 hours prior cooking to “attempt” to remove some of the excess Salt.
