Salt Ling fillet (skin on)
Before refrigeration was available, salting fresh fish was the common way to preserve & transport it. Salted Ling has long been staple food for Irish rural communities. The tradition is still ongoing in area like Kerry where it is widely consumed as a tradition on Christmas Eve.
Salted Ling is also a perfect to use as cheaper alternative to Bacalhau (Salt cod).
This product must be pre soaked in fresh water for 24 hours prior cooking to “attempt” 🙂 to remove some of the excess Salt.
