The European anchovy (Engraulis encrasicolus) is recognized worldwide as having the highest quality, without a doubt. At Agromar, for all our ranges we only use the Cantabrian coast anchovy caught in the spring, at which time it is at its optimum flavour. We later age them in salting for 6 months, to finally clean and fillet them, so they become the highly-valued Cantabrian Sea anchovies. corresponds to the double zero category.
At Agromar Limited Production, we include only large anchovies, selected due to their greater scarcity and value, as well as for their better presentation.
