Poutargue de Marseille, The Parmesan of the sea… La Poutargue or Bottarga is dried salted cured Mullet Roe. A 4000 years old tradition from around the Mediterranean and further ashore as it is also a very popular product in Japan ( Karasumi) & other parts of Asia. Our Poutargue is traditionally cured by Stephane @ Maison Mathieu a craft smokehouse in Marseille. Anedoctaly this Stephane was our best friend next door while growing up as a kid in Paris. It is a small world…    Use Poutargue thinly sliced as a snack or simply grated over Pasta or to enrich a sauce for an Umami explosion.
