Monk fish have big “ugly” wide faces. Unfortunately this makes them highly prone to by catch while trawling with small mesh for other target species such as Prawns. Such nets are now equipped with highly efficient escape panels on their top parts. Monk unfortunately always swim toward the bottom… Monk fish must be Cooked or Frozen 24 hours prior to consuming raw as a ceviche.
