Sword fish & Tomato sauce

A mediteranean inspired recipe for our Atlantic caught SWORD FISH, making the best of all those delicious sweet Irish  tomatoes in season. Alternatively, Try this recipe with fresh tuna or any of our jars of preserved Bonito del Norte( added at the end )

Ingredients

  1. Sword fish steaks (150-250 g per serving)
  2. 4 Large tomatoes roughly chopped + dozen cherry tomatoes
  3. 2 red onions (thinly chopped)
  4. Garlic ( crushed
  5. Olive oil
  6. Black olives (chopped)
  7. Anchovies (minced )
  8. Capers: some for the sauce, some for garnish
  9. Spoon of sugar
  10. Tea spoon of smoked paprika
  11. Flour
  12. Toasted pine nuts
  13. Parsley or basil for dressing

Method

  1. 1 Begin with your Tomato sauce: Gently fry your onions till translucent, add the garlic followed shortly by a generous slug of white wine, chopped,tomatoes, smoked paprika, minced anchovies, spoonful of Sugar. Cook and reduce
  2. 2 Season your sword fish steak, dip in flour and fry in a very hot pan with olive oil. Cook for 5 minutes, flip the fish. Add whole cherry tomatoes , cover with the sauce and cook together for another 5 minutes.
  3. 3 Serve with pasta. Dress with the roasted pine nuts, green capers.
