SPICY TOMATO FISH SAUCE

We loved Spanish Chorizo until making acquaintance with its Spicy Italian counterpart:  N’duja… 

Now we love both…

Ingredients

  1. 200 g fish (Baby Cuttle fish, Squid , Octopus, Monk fish) per servings
  2. 1/2 pack NDUJ'A or full pack for xxx spicy
  3. 1 onion sliced
  4. 1  tin tomatoes or tomato sauce
  5. 2 bay leaves
  6. Seasoning: Salt, Pepper, Chilli
  7. 1/2 Glass Dry White wine

Method

  1. 1 Add a good Slug of olive oil to a heavy pot & Sweat off the N'duja and onion for 10 minutes. Add wine and reduce a little. NO N'Djuja... Use Chorizo
  2. 2 Add the tomato, and bay leaves and bring to a simmer.
  3. 3 Add the fish or seafood, stir and cover.
  4. 4 fish will cook within 8/10 minutes, Squid or cuttle fish will need to soften for a longer cooking time of 35-45 minutes on a low heat or until the desired tenderness. Season with salt & pepper.
  5. 5 Feel free to add a few shellfish, a tin of chickpeas or white beans.
