Spicy Nduja & Baby Cuttlefish Stew

Ingredients:

1kg baby cuttle fish (defrosted)

1/2 pack nduja (diced or torn) or use the full pack for xxx spicy

1 onion sliced

1  tin tomatoes or tomato sauce

2 bay leaves


Method:

1 – Add a good glug of oil to a heavy pot & Sweat off the nduja and onion for 10 minutes.

2 – Add the tomato, and bay leaves and bring to a simmer.

3- Add the cuttle fish, stir and cover.

4- Cook for 35-45 minutes on a low heat or until the desired tenderness.

Season with salt & pepper.

Feel free to add more of your favorite fish, a tin of chickpeas or white beans =)
