Crank your oven up to full heat.
On a roasting tray place a punnet of Cherry Tomatoes, Two Finely Sliced Onion and some Finely Chopped Garlic.
On top place your Spatchcock or Split Wild Sea Bass (Choose in preparation method) and season everything well with Sea Salt, pepper, olive oil.
Add a splash of white wine and a squeeze of fresh lemon juice.
Roast everything for 15-20 minutes until the skin is nice and crispy and the flesh flakes easily.
