Ceviche is a dish featuring firm raw fish or seafood cured in citrus juices, alongside various seasonings like onions, chili, and coriander. The acidity of the citrus juices cooks the seafood without heat. A fresh and refreshing way to serve fish.


  1. 1 Kingfish fillets, diced or cubed
  2. 2 cups fresh grapefruit juice
  3. 1 cup fresh lime juice
  4. 1 red onion, finely chopped
  5. Half a cucumber thinly cubed
  6. Seeded Chopped tomatoes
  7. 1 jalapeño, seeded and finely chopped
  8. 1/2 cup fresh coriander chopped
  9. Salt and pepper to taste
  10. 1 grapefruit, segmented for garnish
  11. Tortilla chips for serving


  1. 1 In a bowl, combine diced kingfish with grapefruit and lime juice. Allow the fish to marinate in the citrus juices for about 15-20 minutes, or until the fish turns opaque.
  2. 2 Drain excess citrus juice from the fish and transfer the fish to a serving bowl.
  3. 3 Add finelly sliced red onion, little cubes of cucumber, seeded tomatoes, jalapeño, and cilantro to the fish. Season with salt and pepper to taste. Gently toss to combine.
  4. 4 Chill the ceviche in the refrigerator for at least 30 minutes to let the flavors meld.
  5. 5 Before serving, garnish with grapefruit segments for a burst of freshness.
  6. 6 Serve the kingfish ceviche with tortilla chips on the side. Enjoy your refreshing and zesty ceviche!
