🐙 Drunken Octopus

“Turning water to wine… always makes  miracle. Try  this  traditional Octopus recipe from Tuscanny.  

Ingredients

  1. 1 whole fresh or thawed octopus (2–3 lbs)
  2. 1 large glass of dry red wine
  3. 1 full onion,
  4. 2 bay leaves
  5. 1 tsp black peppercorns
  6. Olive oil (for finishing or grilling)
  7. 2 crushed clives of garlic, branch of Rosemary and fresh Thym
  8. Optional for garnish: lemon wedges, thinly sliced onions, chopped fresh Parsley, Smoked Paprika
  9. Serve with roasted baby potatoes and chilled dry red wine.

Method

  1. 1 Purify the Offering __ Rinse the octopus well under cold water. Remove beak and eyes if not already cleaned.
  2. 2 The Baptism__ In a large pot, combine Octopus, full onion, Bay leaves, and peppercorns. Add just enough wine to barely cover. (Do not succomb to the evil temptation of adding salt...)
  3. 3 Let the Spirit Move__ Bring to a slow simmer over medium heat. Do not boil Cook 30 –60 minutes according to size and until tentacles or the onion are fork-tender.
  4. 4 Time for contemplation__ Once cooked, remove from heat and let the Octopus rest in its wine bath. Once cool, remove the Octopus, allow to drain, and chop the tentacles in large bite size chunks.
  5. 5 Give the Angel their share__ Return the saucepan with cooking liquor back on the stove on low heat, and simmer to evaporate half the liquid and concentrate the flavours
  6. 6 The Resurrection___ Add olive oil to a frying pan on low heat with the crushed Garlic and herbs, gently infuse for a few minutes befoer discarding the aromatics. Pour the oil over the octopus chunks, stir to coat heavenly... amd return to the frying pan over high heat and grill the pieces of Octopus 2 -3 minutes on each side to char and deepen flavour. Plate the octopus and deglaze the pan with the reduced cooking liquor.
  7. 7 Final Anointments___ Pour the juice reduction from the pan over the Octopus pieces, add the roasted potatoes, garnish with thinly chopped onions, parsley and an optional sprinkle of smoked or hot Paprika to taste.
  8. 8 The adoration... enjoy ,,, with a glass of chilled dry Red wine
