Sashimi grade_ Irish Bluefin Tuna is known for its exceptional quality and delicious Umami in place as far as Toyosu, Tokyo Central Fish Market.
Without any active quota for those fish to the Irish Fishing fleet, we rely on a very small & seasonal supply of accidentally caught fish (by-catch).
To be labelled as Sashimi Grade, any Tuna must be frozen first ( its’s the law). In order to comply with this regulation while minimizing the damage to quality, we freeze and store our Blue fin Tuna in a specific Ultra freezer bringing temperature below -65 degree. Preserving both texture, color and apperance of the Tuna loins.
