This highly-valued cephalopod from the Atlantic Coast requires a careful production. We cook it to perfection and, after that, we cut it and select it to finally present it with olive oil in a glass jar. It is a perfect dish to eat marinated with a salad or with paprika and olive oil, the traditional Spanish way.
