“I WANT ONLY WANT FRESH SASHIMI GRADE TUNA ?” Sorry doesn’t exist the appellation “Sashimi grade” is a regulatory term that applies to fish that has been previously frozen to prevent the risk of parasite. It is EU food safety rules, any Tuna sold as sashimi grade has been previously frozen and refreshed.
Tuna does not freeze well in regular freezers (-20.C), where the flesh color oxidize and turns brown in a very short time. The process of Ultra freezing below 5o degrees, (Cryo-preservation), prevent this. Something we learned about during inspirational visits to Japan fish markets, where most of the Tuna are actually sold from frozen but preserved at such temperature.
