The section of the fillet surrounding the collar of the fish is the most tender & flavorful. Always a cut of choice for fish connoisseurs.  Each of  our meaty collar are prepared with a generous 200g darne to make them a full meal. Due to the nature of this product, bones will remain.

Such a cut is best cooked on high heat or flames… and arereserved or the grill, griddle or the BBQ
