Famous for its Poets and famous Irish Revolutionary, Lissadell in Sligo has also gained an established reputation for its Oysters in London restaurants in the mid-nineteenth century. The wild oyster fishery fell into decline in the 1930s but in 1986 Gigas oysters were introduced to the bay by the current producers. The lissadel oyster is characterized by a well rounded shell (from a consistent care & turning of the Oyster bags) making them “easi-er” to open.
