Kombu / Kelp

Hand harvested Kombu from the wild Atlantic shores of Sligo, by Carrraig Fhada. Kombu is traditionally used to create broth (Dashi) adding depth of Umami with this Sea vegeatable a power house of Natural Monoglutamate. Kombu is also used in the Japanese fish curing method named Kombujime where the flavour of a piece of fish is enhanced by wrapping it and curing it between pieces of Kombu.
