Cocochas (Spanish) or Kokotxas (Basque) is a highly thought after delicacy in Northern Spain where this tender delicate part of the Silver Hake ( the throat, The soft tissue and muscles located under the jaw). One hake, one morcel.. So it ‘ll take a fair few fish to fill up your plate….

Usually consumed from Fresh, Cocochas conservas are unusual, so we are lucky that Agroamar Conservas is producing some as part of their Premium range.

Best served slightly cooked in its own tin Liquor, and served over rice or with bread.
