Sweaty Betty – Lemon, Butter & Peas

It’s The Return Of Our Old Friend…

Treat yourself to a simple, juicy and tasty supper. Get a large piece of foil or baking paper. Drizzle a little oil and place some thinly sliced onions in the center.  Season a portion of Betty with salt & pepper and place on-top. Add a handful of frozen peas, a knob of butter and a slice of lemon on top. Seal the foil or paper and bake in a hot oven for 15-20 minutes depending how well you like your fish cooked.

Serve with some
spuds, rice or couscous.
