Thinly slice the potatoes, toss in salt, pepper and oil, bake in the oven until they are fully cooked this can take 30-40 mins. When they pierce easily with a knife they're ready.
Trim and cut the sprouting broccoli into single stems. Trim and cut the scallions in half.
Scatter the broccoli and spring onions over the cooked potatoes, season with salt, pepper and a drizzle of oil.
Bake in the oven for 10 minutes.
Mix the honey and mustard in a bowl.

HOW TO SKIN FISH FILLETS THE EASY WAY???
So simple. Place your fish pieces, skin size up on a grill tray. Pour boiling water straight from the kettle on to the skin. The heat will cook the skin, simply peel it off. Dry the fish pieces with kitchen paper and use immediately.
Put the salmon on top of the greens, sprinkle salt on to each fillet.
Spoon the honey mustard on top of the salmon.
Bake for 10-15 minutes.
Portion onto each plate, squeeze some lemon over the fish and enjoy.
