Everyone deserves a kitchen’s break on Saint Patrick’s day. Go out, enjoy the Parade, and possibly “may be” few hours of catching up with old friends, neighbours and family at your local pub. And when it is eventually time to go home… You will only be looking forward to return & enjoy a delicious warm & filling bowl of Seafood Chowder, prepared the day before, simply waiting to be reheated. A lot quicker, healthier and tastier than the local Takeaway….
Chowder is fishy comfort food. It’s incredibly cheap & easy to make. Enjoy it with home made brown or Soda bread.

Warm a wide pot on a medium heat, add the oil, then the onions, cover with the the lid on low heat and cook for 5-10 minutes until the onions are soften.

Next add the diced carrots, Add a pinch of salt and pepper to the pot, stir to coat, put the lid back on for a couple of minutes

Add the cubed potatoes and cover with the hot stock, put the lid back on and cook on a low heat for 20-30 minutes

Check that the potato cubes are cooked by piercing with a sharp knife

When the potato is cooked, stir in the cream and milk and heat through for a couple of minutes

Add the fish mix then stir the pot and put the lid on for 3-5 minutes

Taste the chowder and adjust the seasoning if necessary

Serve in bowls and top with chopped parsley and soda bread
