Chowder is fishy comfort food.  It’s incredibly cheap & easy to make. Enjoy it with home made brown or Soda bread.

And if you are looking to make chowder a bit more posh this Christmas why not add some prawns or scallops at the end so they are just cooked.


  1. 1 tablespoon oil
  2. 1 onion, finely diced
  3. 2 carrots, peeled and diced small
  4. 3 large potatoes, peeled and cubed (600g)
  5. 600ml fish or chicken stock (hot stock)
  6. 500g Mixed chowder fish ( Fish mix)
  7. 250ml double cream
  8. 100ml milk
  9. Salt and pepper
  10. Chopped fresh parsley
  11. Serve with soda bread


  1. 1 Warm a wide pot on a medium heat, add the oil, then the onions, cover with the the lid on low heat and cook for 5-10 minutes until the onions are soften.
  2. 2 Next add the diced carrots, Add a pinch of salt and pepper to the pot, stir to coat, put the lid back on for a couple of minutes
  3. 3 Add the cubed potatoes and cover with the hot stock, put the lid back on and cook on a low heat for 20-30 minutes
  4. 4 Check that the potato cubes are cooked by piercing with a sharp knife
  5. 5 When the potato is cooked, stir in the cream and milk and heat through for a couple of minutes
  6. 6 Add the fish mix (and your posh scallops or prawns) then stir the pot and put the lid on for 3-5 minutes.
  7. 7 Taste the chowder and adjust the seasoning if necessary
  8. 8 Serve in bowls and top with chopped parsley and soda bread
