Tomatoes, courgettes, onions, peppers, carrots… what to do? Well roast them up with a nice piece of fish!!!
Chop them up, place them on a roasting tray, season well and drizzle with oil.
Place some nice pollock, hake, haddock or cod fillets on top (skin side up), topped with a few knobs of butter, some seaweed salt and roast in a very hot over 200-220c until the skin is crispy and serve over some boiled rice. A few lemons cut into wedges roasted too add a new layer of flavour =) Use the juices from the pan as your sauce…
