1 Granny Smith apple peeled and diced as small as possible (add a squeeze of lemon to stop them from turning brown)
A few sprigs of dill chopped or a teaspoon of dry dill.
The zest and Juice of 1/2 a lemon.
1 small chilli finely chopped.
1/2 a red onion finely diced.
1 stick of celery finely diced (optional).
1/2 a cucumber peeled, de-seeded and finely diced.
2 or 3 heaped tablespoons of mayo depending on how wet you would like the salad.
Salt & Pepper for Seasoning.
Place a baking or cookie sheet into the fridge to chill for 15-30 minutes.
Open your crab and spread out the chilled baking sheet to give it a once over for any little bits of shell or cartilage with eh tips of your fingers.
Turn the music of tv down as you might hear them make a noise against the tray.
Next give the crab a little squeeze to remove some but not all of the liquid as you place the crab into a mixing bowl.
Add all the remaining ingredients and season with salt & pepper.
Serve by dividing the crab and placing in a ring mould or with some fancy salad greens.
This recipe Also doubles as a good sandwich or "crab roll" oil a soft brioche hot dog bun.
You can also substitute with any your favourite fresh herbs.
