Salmon Butterfly known as the boneless cutlets are  regular darnes, with a center split cut, leaving the skin joining two symmetrical pieces ( The butterfly cut).

Looks nice, tastes great. Best pan fried with a very light rub of oil in the pan to achieve a beautiful caramelization and crispy finish.
