Pinkles — short for Pink Winkles — are small sea snails occasionally caught as by-catch alongside Surf Clams. Usually landed in numbers too small for a regular market, but when we get enough, they’re well worth trying — firm, briny and full of proper shellfish flavour. Perfect for: Boiling • Seafood platters • Eating with a pick • Garlic butter
