The section of the fillet surrounding the collar (wing) of the fish is the most tender & flavorful and a cut of choice for fish connoisseurs.  Our meaty collars are prepared with a generous 200g darne to make them a full meal. Due to the nature of this cut, bones will remain. Best cooked on high heat or flames... to sizzle the fat and crisp up the skin.
