Kingfish, Yellowtail — also known in sushi circles as Hiramasa or Amberjack — is an oily Pacific fish prized for its rich umami and high oil content. Once flown in from Japan for high-end European sushi restaurants, it is now expertly farmed in the Netherlands in land-based RAS systems, with minimal impact on the surrounding environment.
