Live Spider Crab Male
Cancer Pagurus
Irish Spider Crab — our answer to King Crab. Let’s be straight: they take a little work. That sweet, delicate meat is protected by a serious armour-plated shell. But the flavour is fantastic, and nothing a rolling pin can’t deal with. Worth the effort? Absolutely. We favour males for their larger claws and legs, while females are better for body meat.

Master Fishmonger’s Notes
Slow food in armour. Boil hard, rest, then make an evening of the picking — the brown meat in the shell is the cook's reward, and the shells owe you a bisque.
