Rock Salmon is the commercial name for Spurdog, a small shark also known as dogfish. Soft, meaty and naturally rich in Omega-3, with a firm texture that holds together beautifully in slow cooking. Once a familiar sight on Irish fish counters, Rock Salmon disappeared after fishing restrictions were introduced over stock concerns.
