3 kg Live Brown Crabs ( all female)
Cancer Pagurus
This is proper slow food. A strong chopping board, a couple of picks and crackers, an apron if you’re sensible, and good company. Take your time, taste every bit of the crab and enjoy the feast. Nothing goes to waste — keep the shells and make a bisque afterwards as your reward. Perfect for: Sharing • Crab feasts • Bisque

Master Fishmonger’s Notes
Slow food in armour. Boil hard, rest, then make an evening of the picking — the brown meat in the shell is the cook's reward, and the shells owe you a bisque.
