Papa Anzois
Papa Anzois (N14) Salted & dried Ray wing fillet in Olive oil
Scomber scombrus
Raia Salgada e Seca com Azeite Salted & Dried Skate (Ray Wing) Fillets in Olive Oil Most people are familiar with classic bacalhau — Portugal’s famous salted cod — but the traditional method of preserving and drying fish with salt extends far beyond cod alone. Skate (ray wing) is one of these lesser-known specialities. Along the southern coast of Portugal, particularly in the Algarve, it is still common to see a variety of fish species laid out on drying racks, preserving a long-standing coastal tradition. This tin from Papa Anzóis embraces the revival of artisanal canning from the region. Looking beyond the obvious species, they have chosen to showcase local skate using traditional preservation methods, creating something distinctive and deeply rooted in Portuguese food culture. Founded in 2015, Conserveira do Arade is a modern artisanal cannery based in the Algarve, created to revive a long-lost canning tradition on the banks of the Arade River. Produced by a small and passionate team, their approach focuses on craftsmanship, quality, and making the best use of locally sourced seafood — preserving regional identity one tin at a time.
