When a boat brings some in, we buy what we can, sell what we can fresh and freeze the rest — octopus actually benefits from freezing, which helps tenderise the flesh. We remove the heads and keep the octopus legs and tentacles only to save storage space. Perfect for: Braising • Grilling • Stews • Mediterranean dishes
