Rebranding Greater Forkbeard as “Sweaty Betty” at our Galway Market stall began as a bit of Saturday craic. We never expected the name to stick — or to see it turn up on fish counters from Cork to Dublin. We’ll happily take the credit for that one. All jokes aside, Sweaty Betty is a delicious white fish with light but firm flakes and a mild, clean flavour. Perfect for: Pan frying • Baking •
