Pouting is a lesser-known white fish from the whiting family. With very little commercial value, it has traditionally ended up as bait in lobster and crab pots rather than on the dinner table. A few years ago, Hugh Fearnley-Whittingstall helped push pouting as a more sustainable alternative to cod, and it is now far more common on specialist UK fish counters.
