One of our favourite. Gurnard has a Firm texture, tons of flavour, and is one of those less popular underated species begging to be discovered. Perfect for gourmet fish fingers, casserole and stew, fish tacos or pan frying. Exceptional in a ceviche Please note: Like a number of inshore-caught species, gurnard can have a high incidence of naturally occurring nematode parasites. We screen our fillets carefully, but some will remain. Gurnard should always be thoroughly cooked, or properly frozen if consumed raw. Delicious fish, but definitely not for every table.
