1 – Put potatoes on to boil and defrost some peas.
2 – Sweat off a finely sliced leek in a few knobs of butter and rapeseed oil.
3 – Add a heaped tablespoon of flour and stir into the leeks until fully coated.
4 – Now add a half pint of milk and cook at a gentle simmer until it begins to thicken.
5 – Add some fresh chopped dill, check for seasoning, add some fresh cream and bring to a simmer.
6 – Lay in your peas followed by your fish mix or chunks of your favourites like ling loin and smoked haddock and cover.
7 – Finish off your mashed potatoes and mix in a good half cup of grated cheddar.
8 – Once your fish has turned nice and opaque you are ready to serve =).
