WHAT TO DO WITH THAT SUPER SOFT ROE ?... First you must firm it up. Place it in a pot, and gently shower it with boiling water from the kettle. Heat will contract & firm up the skin.
WAHT TO DO IF THE ROE IS BROKEN IN PLACES ? it happens, the thin outer membrane is extremely delicate, insist on that area with hot water, to firm up the eggs themselves. (Alternatively, some of our older customers traditionally place the roe in a plastic bag and let it simmer gently at low heat for a few minutes not to loose any precious eggs and their nutrients.

Bring the water to a barely simmer, add salt and cook super gently for 10 minutes. Allow to rest in the hot water for another 10 minutes off the heat.

Large thick roe are great for slicing with a sharp knife into 1/2 inch pieces (as you would with black/white pudding). For smaller roe you can leave them whole.

Next coat them in flour, then beaten egg wash, and finish in Panko or regular breadcrumbs

Heat up a frying Pan @ Medium heat and fry on each side until golden brown.

Serve up with lemon, tartare sauce, and a simple baby leaf salad.
