Smoked Coley is a cheaper and very popular alternative to Smoked Haddock. Coley is also known as Coalfish and Black Pollock. Prior to smoking, Annatto, (a natural colorant “think Red Cheddar”) is added to the Salt brine to produce a dark orange color.

FLAVOUR: Strong, Smoked, Salted TEXTURE: Firm, Meaty

ORIGIN: Scotland: Trawl Caught.

SUSTAINABILITY: Eat Moderately (more info)

COOKING QUALITY: Thick, strong flavour concealed by Smoked flavours and a higher salt content.

COOK IT: Warm in the oven, Grill, Pan fry.

STORAGE: In your fridge 4-5 days. Not suitable for home freezing.
