Silver Hake or Hake is a soft and most delicate fish.
We gently hand scale all these fish before filleting and removing the last bones and other unwanted bits. We always recommend to our customers to cook this fish leaving the skin on. Not only does this prevent those delicate fillets from breaking up in the pan, but it does also taste amazing when perfectly crisped and toasted.
(Yes it does… Take our world for it… ) Or else why would we go into so much trouble of carefully descaling every single Hake we prepare.
