Monk fish have big “ugly” wide faces. Unfortunately this makes them highly prone to by catch while trawling with small mesh for other target species on the bottom such as Prawns. Such nets are now equipped with highly efficient escape panels on their top parts. Monk unfortunately always swim toward the ground. Monk fish must be Cooked or Frozen 24 hours prior to consuming raw as a ceviche.

This is a wild product, we carefully check for them, but be aware of the eventual remaining presence of Nematodes parasites on this product.
