Flying Fresh Food across the Globe from Poor Countries to Richer Ones is Madness with the obvious negative consequences for the Environment:
* Please adapt to local fish and seek out Irish substitutes to exotic species.
*Compromise & use Frozen exotic species instead of Fresh.
( We have invested in an Ultra low temperature freezer (-65 degrees C) allowing us to process Frozen Sashimi Grade Irish Blue Fin Tuna and Sword Fish caught every September on the West Coast. This technology was developed in Japan to allow their overseas fishing fleet to catch and land higher quality frozen fish, so if it is good enough for the Japanese, it is good enough for us… 🙂
